Recipe: Make Healthy Pickled Jalapeño Hummus From Scratch at Home

Have you found yourself snacking more than usual while working from home? I know I have!

One of the biggest challenges for us these days has been staying motivated to eat healthfully, as well as finding the inspiration to change up the routine every once in a while (so as not to exhaust all of our go-to recipes). For us, cooking from scratch has been a great meditative activity to make sure we're staying on top of our health. We've been loving the recipes you've been creating and sharing with us.

Pickled Jalapeño Hummus

The zesty pop of flavor you didn't know you needed in your hummus: pickled veggies. There are so many benefits to including pickled veggies in your diet - including helping your digestion with the good-for-your-gut probiotics found in pickles. Pickles also fight food waste! Pickling your vegetables can extend their shelf-life, and help you to make the most of your groceries. Don't be afraid to buy more fresh produce when you've learned back-pocket skills like pickling to save your food.

Now for the recipe, from @plantbasedchicana:

"When it comes to snacking, 90% of the time I’m reaching for hummus. 😂 Recently made this Jalapeño Cilantro Hummus and now I’m OBSESSED! I used pickled jalapeños instead of fresh jalapeños, so the hummus is mild and has a great flavor."

☆ RECIPE ☆


* 1 (15-ounce) can of garbanzo beans (rinsed & drained)
* 1/4 cup tahini
* 1 lemon (~3 Tbsp)
* 3 Tbsp water

* 2 Tbsp extra virgin olive oil
* 2 pickled jalapeños
* 2 garlic cloves, minced
* 2 Tbsp chopped cilantro
* 3/4 tsp salt * 1/4 tsp cumin

 

☆ DIRECTIONS ☆


1. In a food processor or blender, blend cilantro, jalapeño, salt, garlic, tahini, EVOO, and lemon juice into a purée.
2. Add garbanzo beans and blend for 3-4 minutes, pausing halfway to scrape down the sides. Add in water if the hummus is too thick (I added 3 Tbsp).
3. Taste and season with additional salt, cumin, and/or lemon juice if needed.

Served with @pulppantry chips ("literally sooo good" she says!). The flavors featured are the Jalapeño Lime and the Salt ‘n’ Vinegar.
